Since the 4th Century, the Western church has observed a 40-day season of fasting and renewal known as “Lent.” The forty days correspond to Jesus’ forty-day fast in the desert (Matthew 4:2). Starting with Easter, and counting back forty days (excluding Sundays, which remain “feast” days), we arrive at the Wednesday which begins the season of Lent: Ash Wednesday. Initially, the season was a time when converts were prepared for baptism on Easter Sunday, but in time, Lent became a season of penitence and renewal for all Christians. Shrove Tuesday, the day prior to Ash Wednesday, became a day when Christians would rid their houses of rich foods such as eggs, sugar and fat (in anticipation of their fasting). Pancakes provided a helpful recipe for taking care of these items in “one fell swoop.” The English term "shrovetide" (from "to shrive", or hear confessions) dates back to about A.D. 1000, when Christians were instructed: “In the week immediately before Lent everyone shall go to his confessor and confess his deeds, and the confessor shall so shrive him as he then may hear by his deeds what he is to do [in the way of penance].”
